Any sound card with six outputs will allow you to mix in 5.1. Most professional level cards have six outputs, and Creative Labs and Turtle Beach both make "prosumer" sound cards with six outputs.

EMI 2/6 might from emagic might also work for you. It can record two at a time and play back 6. It connects to the USB port and sells for around $300.

The Audiophile 2496 from M-Audio can pass the 5.1 data as well via S/PDIF. (Still have to have an external decoder in something like a 5.1 system, of course.) It also does true 24-bit/96 kHz too (so does the EMI 2/6), unlike some soundcard companies that shall go unmentioned.

The Audiophile costs about $160-170 USD street.
