A couple:

-Check the plug of the input you're using for input for recording. It should be a stereo plug, indicated by a tip, a ring, and a sleeve. (They're separated by two colored bands.) A mono plug is indicated by just a tip and a ring. (Separated by one colored band.)

-Ensure that the input jack you're using for recording is also stereo.

-Info on setup would be great, like how you're connecting everything in the recording chain together.

at my house im using a 8-track beringer mixer and then running the microphones into that then using a single cable that runs out form the phones output into my computer mic in. but the odd thing is at my house i can record in stereo. at my friends last night i brought it over and at his house it will only record in one channel. so i was figuring it was some odd nuance that was changed in soundforge

"Mic in" is mono. You should be using "Line in".

" that then using a single cable that runs out form the phones output into my computer mic in. "

Don't use a 'phones out' - that is designed for driving low impedence headphones, and it likely to be comparitively noisy and distorted.

Don't use a 'mic in'. That is designed for very low level signals, and is mono. Use the stereo 'line input' on the soundcard.

You may need an adaptor cable to go from 2 x 1/4" mono jack plugs to a 1/8" stereo jack plug, which are commonly avaalable, or easy to make.
