If you've got the dosh and you plan on expanding in the future, pick up ACID Pro 3. That way, you won't feel limited when you're ready by the other, less powerful versions. Pro is the only version that can, for example, do 24-bit and supports 3rd party DirectX plug-ins.

Pro shares the same basic interface as its less-powerful cousins as well.

For some comparisons between the versions, here's a chart.

You can get it for about $165 if you hunt around on the net, or you can take that price down to a Guitar Center or somebody who'll match the net price. I've done that a few times and it saves the time of the shipping.

I would suggest downloading the complete Acid PRO 3.0 software from
this website and playing with it. Without paying for an activation code, it
will still run in demo mode and let you play with just about every feature
for as long as you wish. That should give you a good idea of whether you
like it or not.

If you do decide to purchase a license, all you'll have to do is register and
activate the demo you've already downloaded.

Just don't buy it from SF! At $349 for a download, it's $200 over the street price, and you get no manual, no disc to resell and/or reinstall from. Caveat pre-emptor!
