What features are restricted / missing in the demo version, as I can pretty much do everyhting I need to with the demo version I've downloaded from Sonics website...?

I believe you've got everything in the demo version. The only difference is that intermittent digital noise is (purposely) introduced into any rendered projects.

You will only be able to do a very small number of MP3 encodes with the
demo version, perhaps only 12 or so. The full version has no limit.

I think the demo version also doesn't burn CDs, but i don't recall for sure.
